Unicorns adore soft sprinkle cookies because of their vibrant colours that remind them of the rainbow. These soft sprinkle cookies are a soft and chewy cookie, littered with lot’s and lot’s of sprinkles. I mean have you seen a happier cookie? There’s no chill time with this cookie and they’re super simple to make. What’s more, they take 10 minutes to bake!
Cake flour – cake flour is a low gluten flour mixed with corn starch. It results in a lighter cookie. You can buy store bought cake flour. You want the plain one, not the self-raising one. Or you can make your own by mixing 1 cup (minus 1 tbsp) with 1 tbsp of corn starch. Sieve them together 3 times.
Baking powder – Baking powder helps these cookie rise.
Butter – I used softened, unsalted butter. Make sure your butter I softened to room temp. 18 – 20C / 65 – 67F.
Caster sugar – also known as superfine sugar.
Salt – I used fine salt.
Vanilla Extract – Always use good quality vanilla extract when baking, it makes a huge difference. I have a great recipe here for it if you’d like to try your own!
Eggs – I used one egg yolk in this recipe and one whole egg. I used large eggs. The addition of the egg yolk helps give this cookie a slightly chewy texture.
Sprinkles – I would recommend using the really good sprinkles call jimmies.
